Gluten-free Fusilli with Gorgonzola and Walnut Sauce


400 grams fusilli Pastificio La Rosa
extra virgin olive oil
1 glass white wine
50 grams walnuts
1/2 Tropea red onion
black pepper
200 grams Gorgonzola cheese


Chop onion very fine, put it in a nonstick pan with 1 tablespoon of extra virgin olive oil and slowly brown it.

When the onion is golden brown, add white wine, Gorgonzola cut into pieces and let the cheese melt slowly.

Grossly chop walnuts in a mortar.

Cook fusilli in a large pot of salted water and drain them al dente; then pour the pasta into the pan with the Gorgonzola, pan-fry until you have formed a soft cream, turn off, add the walnuts, a good grinding of pepper and serve.
