Macaroni with Bacon

Ingredients

400 grams macaroni Pastificio La Rosa
100 grams bacon cut in three slices
1 small glass of brandy
1 dl and 1/2 cream
4 shallots
30 grams grated Parmesan cheese
salt
olive oil
nutmeg
ground pepper
1/2 bunch of chards without white rib

Preparation

Slice shallots and cut bacon in thin strips, grossly chop the green part of the chards.

Brown shallots and bacon in a tablespoon of olive oil, when they become golden brown sprinkle with brandy and let it evaporate.
Join the leaves of chards and let them cook slowly, then pour the cream, add a sprinkling of pepper, salt and nutmeg; when it begins to simmer take it off from fire.

Cook the macaroni in a large pot of salted water, drain them al dente and dress with the sauce and a generous handful of Parmesan cheese.
